Recipes Using Golden Star Brand Products Golden Star South of the Border Rice For this easy side dish, the rice is sautéed before cooking, in true South of the Border style. Substitute beef broth for chicken broth when serving with red meat. 1 ½ cups GOLDEN STAR BRAND JASMINE RICE ½ chopped onion 1 garlic clove, minced 2 tablespoons vegetable oil 2 ¾ cups chicken broth, heated ½ cup Mission Fresh Salsa 1 small carrot, peeled and finely diced (optional) In large saucepan over low heat, cook rice, onion and garlic in oil until rice is lightly browned, stirring frequently. Stir in hot chicken broth, salsa, and carrot (if desired). Cover and simmer until all liquid is absorbed, about 20 minutes. Yields 6 servings. Golden Star Tex-Mex Squares 2 cups GOLDEN STAR BRAND JASMINE RICE, cooked 1 4 oz. can green chiles, diced 10 oz. Monterey Jack cheese, grated 3-4 tbsp. pimentos, chopped 2 tbsp. olives, chopped 6 eggs, slightly beaten 1 tsp. salt Pre-heat oven to 350 degrees and prepare a buttered 13 x 9 x 2 inch baking pan. Combine rice, green chiles, cheese, pimentos and olives in mxing bowl. Add eggs and salt. Pour into baking pan and bake for 30 minutes or until set. Cut into 1 ¼” squares. Serve warm or refrigerate and serve later. Yields 50 servings. |
